- 1 teaspoon red chili powder

- 1 teaspoon turmeric powder

- 1 teaspoon garam masala

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- Fresh coriander leaves (for garnish)

- Fresh mint leaves (optional, for garnish)

- 3 tablespoons oil or ghee (clarified butter)

- Salt to taste


**For Layering:**

- A pinch of saffron soaked in 2 tablespoons warm milk (optional)

- Fried onions (for garnish)

- Fresh coriander and mint leaves


 Instructions:


 Step 1: Cooking the Basmati Rice


1. **Rinse the Rice:** Start by rinsing the basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

   

2. **Cook the Rice:** In a pot, bring 2 cups of water to a boil. Add the bay leaf, cloves, cinnamon stick, green cardamom, and a pinch of salt. Once the water is boiling, add the rinsed rice. Stir gently, cover, and cook on a low flame for about 10 minutes, or until the rice is 80% cooked (it will finish cooking with the mushroom masala later). Drain any excess water and set the rice aside.


 Step 2: Preparing the Mushroom Masala


1. **Sauté the Mushrooms:** Heat 2 tablespoons of oil or ghee in a pan over medium heat. Add the cumin seeds and let them splutter. Add the sliced onions and sauté until they turn golden brown. 


2. **Add the Aromatics:** Stir in the ginger-garlic paste and slit green chilies. Sauté for a minute until the raw aroma disappears.


3. **Cook the Tomatoes:** Add the chopped tomatoes and cook until they become soft and mushy.


4. **Spice it Up:** Add the turmeric powder, red chili powder, coriander powder, and salt. Stir to combine, letting the spices cook for about 2 minutes.


5. **Add the Mushrooms:** Toss in the cleaned, chopped mushrooms and cook until they release water and become soft, about 5-7 minutes.


6. **Finish the Masala:** Lower the heat and stir in the yogurt, mixing well to create a thick, creamy mushroom masala. Add garam masala for that final burst of flavor. Cook for another 2-3 minutes and turn off the heat.


 Step 3: Layering the Biryani


1. **Layering in a Pot:** Take a deep, heavy-bottomed pan or pot for the final layering. Start with a thin layer of mushroom masala at the bottom, followed by a layer of cooked rice.


2. **Garnishing Layers:** On top of the rice, sprinkle a handful of fried onions, some fresh coriander, and mint leaves. If using, drizzle a few drops of saffron milk for a royal touch. Repeat the layers, finishing with rice on the top.


3. **Final Steam (Dum Cooking):** Cover the pot with a tight-fitting lid, or seal it with aluminum foil to trap the steam. Cook the biryani on low heat for 10-12 minutes. This helps the flavors meld beautifully.
